Tom Bollen is a chef at restaurant Taratata in Hasselt, Belgium. In an interview with the Beer Idiots Bollen talks about combining a love of Belgian beer and local produce. The Michelin Guide says “the hip interior of Taratata is perfectly paired with chefs Christoph’s and Tom Bollen’s culinary talents. The flavours of seasonal produce are enhanced by unusual combinations and delicious textures. We recommend kicking off the meal with a ginger lemonade.” We are all for that, as well.
