Olivier Huens is hands on at Brasserie H2O as he brings his twist to brewing. His success with Ale Capone, his first beer has endeared him to the local craft bars and drinkers. 

Huens started brewing when he was 14 on a bet with his dad. He prefers to forget that first experience, but he doggedly continued crafting his art as a home brewer at university, was hired by Brasserie d’Achouffe, part of Duvel Moortgat Brewery. His next gig was at a brewery that was sold to a Chinese business and he ended up at Brasserie de la Senne, where he says he really learned his craft. 

His objective all along was to create his own brewery, H2O. The name incorporates the initials of his name. The brewery launched its first brew in 2018 in Evere, Brussels. He designed and built the brewery to his own tastes, incorporating equipment or redesigning it to be green. He uses wood pellets for heating the wort and tries to be as efficient as possible.

“I would like to prove that it is not complicated or very expensive to start a brewery,” he says. “It is just a question of motivation. My objective is to create beer and offer some moments of pleasure to people.”
